Blackcurrant Recipes and Tips

For many years my family have enjoyed the goodness and taste of our Irish Blackcurrants, with their deep purple colour, but are often asked "What do you do with them?"

Blackcurrants have long been regarded as having remarkable health benefits. Recent scientific studies using clinical research have proven the high levels of vitamin C in Blackcurrants, a half a cup provides your recommended daily intake. They are also full of Anthocyanins, that's what gives them their deep colour, highly active antioxidants as well as many other beneficial bioactives.

Is it any wonder that in Ballykelly House, the home of the Jeffares, recipes handed down through generations have been in abundance. Our humble blackcurrant is always elevated to centre table.

In sharing these recipes I hope that you will experiment with using our Irish Blackcurrants. Remember you can use our frozen Blackcurrants all year round. If using frozen the cooking time may take an extra five minutes.

Mr Jeffares Blackcurrant Smoothies

Are made easy by blending milk with natural yogurt and a generous splash of Mr Jeffares Blackcurrant Cordial. Add in a banana and you have an energy packed start to the morning.

Tropical Blackcurrant Babe Cocktails

Tropical Blackcurrant Babe Cocktails will be the wow of the party! For one serving, pour a measure of Mr Jeffares Blackcurrant Cordial into a long glass over ice cubes. Add two measures of dark or white rum. Top up with pineapple juice and serve with straws . You can add fresh Blackcurrant sprigs, when in season to dangle over the side of each glass.

Mr Jeffares Blackcurrant Ice lollies

Are winners with kids and adults! Make up a jug of Mr Jeffares Blackcurrant Cordial topped up with still water, in measurements of one part cordial to four parts water, or as you like, so taste first to make sure it has plenty of blackcurrant flavour. Add an extra splash if it’s too weak. Pour into little lolly moulds with caps that have holes for the lolly sticks. Place the sticks in the centre of each lolly. Freeze solid.

Mr Jeffares Blackcurrant Salad Dressing

A dash of Mr Jeffares Blackcurant Cordial can be added to a homemade vinaigrette dressing. Make the dressing in a jam jar, in the proportions of 1tbsp white wine vinegar to 4tbsp olive oil, ½tsp Dijon mustard and a squeeze of lemon. Add the Cordial, season and put on the lid of the jar. Shake well and there you have it! Use to dress salads with cold roast duck or pork. Throw a few whole Blackcurrants into the salad too, for little bursts of fruit flavour in the mouth.

Blackcurrant Drinks Mixer

Pour a measure into a long glass and top up with still or sparkling water, lemonade or even Irish apple juice. It’s also wonderful with milk.

Panna Cotta served with Mr Jeffares Blackcurrants

Mr Jeffares Blackcurrant Cordial drizzled around individual Panna Cotta servings makes a glamourous and delicious dessert. Even better served with our whole blackcurrants on top.

Ice Cream with a Drizzle of Blackcurrant Cordial

Pour a drizzle over a bowl of ice cream for a quick dessert or onto your porridge for a nutritious breakfast.

Blackcurrant Kir Royale

Squish our whole Blackcurrants into diluted Mr Jeffares Blackcurrant Cordial or tope with Champagne for the perfect Kir Royale.

Blackcurrant Slushies

Blackcurrant Slushies are easy to make at home. For one serving, place a generous measure of Mr Jeffares Blackcurrant Cordial in a blender with a few ice cubes and whizz to crush the ice. Pour the lot into a glass and sip through a straw. Delicious.

Classic Combo of Vodka and Blackcurrant

Vodka and Blackcurrant anyone? This is a classic combo, made all the better with an artisan Blackcurrant Cordial in the mix. Pour one generous measure of vodka over ice into a tall glass. Add a splash of Mr Jeffares Blackcurrant Cordial and top up with tonic water or lemonade.

Summer Berry Compote

Making a Summer Berry Compote? Don’t forget to add a splash of Mr Jeffares Blackcurrant Cordial when poaching mixed summer berries like blackcurrants, strawberries and raspberries. This gives a lovely dark sauce with intense berry flavour. Serve cold with ice cream or natural yogurt.

Mint and Blackcurrant Ice Cubes

Make mint and Blackcurrant ice cubes to cool a jug of sparkling water, lemonade or Sangria. Pop whole mint leaves in each section of an ice cube tray. Top up with diluted Mr Jeffares Blackcurrant Cordial. Freeze solid then pop out cubes as required.
