Blackcurrant Teacakes


Ingredients

  • 256g of Self Raising Flour
  • ½ teaspoon of Salt
  • 100g of Caster Sugar
  • 100g of melted Butter
  • 237-295ml of Milk
  • 1 Egg
  • 354g Mr Jeffares Frozen Irish Blackcurrants
  • 1-2 tablespoons of Caster Sugar

Method

Begin by mixing flour, salt and caster sugar in a mixing bowl. Melt the butter and then mix it with the milk and the egg in another bowl and add Mr Jeffares Blackcurrants. Gently pour the blackcurrant mixture into the dry ingredients and carefully fold together. Mix until flour has dampened but is not smooth. Spoon equally the mixture of 12 large or 24 small, into the greased muffin pans. Sprinkle on top with castor sugar and bake at 220C for a period of 12-15 minutes, until consistent and golden on top.
